
Sweet Potato Tacos with Kimchi Slaw

What you need

cup cilantro

fl oz avocado oil

tsp garlic powder

tsp taco seasoning

tbsp sesame seed

tsp fine sea salt

cup black beans

cup corn tortilla

cup slaw mix

sweet potato

tbsp green onion

cup corn

cup sauerkraut
Instructions
1. Preheat the oven to 450°F (232°C). 2. Wash, peel and chop the sweet potato. Place it on a baking tray, spray with avocado cooking oil and sprinkle with sea salt, 1 tsp of taco seasoning and 1 tsp of garlic powder. 3. Bake for 13 minutes. 4. In a bowl, mix the ingredients for the slaw and set aside. 5. In a large bowl, mix the cooked sweet potato with the rest of the taco seasoning and garlic powder. Stir well. 6. Heat the corn tortillas in a microwave for 30 seconds or in a hot skillet for 10 seconds per side. 7. Top the tortillas with sweet potato mix, kimchi slaw, sesame seeds, and dried green onions. Enjoy!
