A delicious easy to make high protein and low carb comforting chicken baked enchiladas, with a kick of peanut chipotle sauce. Easy to make, baked and just a crowd pleaser, you really need to make this recipe, great for meal prep as well!

What you need

cup powdered peanut butter
cup bone broth

tsp garlic

tsp pink himalayan salt

black peppercorn

cup rotisserie chicken
tbsp granulated onion

flour tortilla

complete seasoning

tbsp chipotle

cilantro

yellow onion

Instructions
Preheat the oven at 350F. Blend all the ingredients for the peanut chipotle sauce for 20-30 seconds. Add some of the sauce to the shredded chicken and mix well. Heat the tortillas for 30 seconds in your microwave and stuff them with the chicken mix. Place them in a greased baking dish and bake for 15-18 minutes.
