Pineapple Pecan Carrot Oat Bars

Super fluffy and soft oat bars, gave some to some friends and loved them... they totally devoured them. On the other side I enjoyed mine with a creamy and frothy latte, or alone! These carrot cake oat bars are always a good idea as dessert or snack.

What you need

1 cup pancake mix
1 tsp baking powder

½ cup sugar

¾ cup pumpkin puree

2 tsp vanilla extract

1 cup carrot

1 pineapple

½ cup almond butter

¼ cup pecan halves

¼ cup raisin
Instructions
Preheat the oven at 375F. Mix all the dry ingredients in a large bowl. Add the pumpkin puree, vanilla, water, shredded carrot, pineapple and part of the raisins and pecans. Pour the batter into a 8x8 baking dish. Top with the rest of the pecans and raisins. Bake for 30 minutes. Let it cool down, cut into 9 pieces, and enjoy!View original recipe
