tsp ground ginger

tbsp unsweetened coconut milk

ground cardamom

sugar

cup monk fruit extract

tsp aluminum-free baking powder

tsp ground cinnamon

cup gluten free all purpose flour

tsp vanilla extract

tsp kosher salt

Instructions
Preheat the oven at 350F. Mix all the dry ingredients. Microwave the bananas for 1:30 minutes. Incorporate the pumpkin, bananas, greek yogurt, vanilla extract, eggs, and mix well. Transfer to 12 silicone baking muffin cups. Slice each cheese piece into half. Top each muffin with the laughing cow cheese. Bake for 19-20 minutes and let it cool. Mix the ingredients for the glaze, top the muffins with it and add more cinnamon, and crushed cereal (optional), enjoy!View original recipe
