Chocolate Cranberry & Apple Rice Pudding

Rice pudding (arroz con leche) is one of my favorite comfort desserts! Plus this version is packed with holiday goodness!

What you need

cup maple syrup

apple

cup fresh cranberries

cup lite coconut milk

chocolate protein powder

cup rice

tsp vanilla extract

cup monk fruit extract

cup milk
Instructions
1. Place your sauce pan in your stovetop and start heating medium heat. 2. Add the milk, evaporated milk, vanilla and let it heat for 3 minutes. 3. Add the rice and chocolate powder or protein powder. 4. Stir until there are not lumps of chocolate with a wooden spoon and let it cook for 6-8 minutes. 5. In your frying skillet add the apples, cranberries, maple syrup and cinnamon and let it cook for 4 minutes until soft. 6. Serve the rice pudding on a jar and top with cranberry apple compote.View original recipe
