1: Blend the papaya until you get a smooth consistency. 2: In a large bowl, beat the Greek yogurt, blended papaya, monk fruit, vanilla, and coconut. 3: Cover the bottom of a circular baking dish with waxed paper (same diameter as the tortillas). A silicone baking dish can also be used. 4: Place a tortilla on the bottom and top it with some of the papaya mix. 5: Top with another tortilla and repeat this step with the leftover tortillas and mix. 6: Add the toppings and freeze overnight. 7: Cut into 4 slices and enjoy!View original recipe
