A delicious easy to make high protein and low carb comforting black bean and cheese empanada. Easy to make, baked and just a crowd pleaser, you really need to make this recipe, great for meal prep as well!

What you need

cup egg white

tsp garlic

pizza dough

tsp black peppercorn

tsp salt

cheese

black beans

tomatillo salsa
Instructions
Preheat the oven at 350F. Mix all the dry ingredients for the empanadas and then incorporate the wet ingredients. Create 6 balls with the dough, carefully using your hands fill them with the cheese and black beans (without over-stuffing with beans) and seal carefully. Place them in a baking dish and bake for 18-20 minutes. Serve with pico de Gallo and enjoy!View original recipe
