There's something about cheese and chorizo together that it just so special and delicious, I decided to incorporate them in this gluten-free croquette recipe!

Preheat the oven at 350F. Blend or process the crackers until you get a flour consistency. Add the rest of the ingredients and process until fully incorporated. Scoop about 1/4 cup of the dough and create your croquettes. Place them in a baking dish and bake for 20-22 minutes, or air fry for 18 minutes at 355F. Serve and enjoy!
