Taking meringue cookies to another level with this healthy and keto friendly fluffy cookies! I used some gluten-free cookies and some sugar-free caramel syrup to make these prettier and more flavorful!

Preheat the oven at 275F. Beat the egg whites and mix in gradually the cream of tartar, monk fruit and sugar-free caramel syrup Beat until fluffy, around 7 minutes. Add the crushed cookies and fold carefully. Scoop about 1/4 cup of the cookie mix into a baking tray and bake for 45 minutes.
