Delicious roasted peanut and chipotle enchiladas, easy to make, keto friendly and super comforting! These enchiladas use Keto Almond Flour Tortillas, making them a staple for preparing Mexican comfort foods. Serve with peanut butter chipotle sauce, chopped onion, cilantro, and roasted peanuts.

1: Preheat the oven at 350F. 2: Blend all the ingredients for the peanut chipotle sauce for 20-30 seconds. 3: Add some of the sauce to the shredded chicken and mix well. 4: Heat the tortillas for 30 seconds in your microwave and stuff them with the chicken mix. 5: Place them in a greased baking dish and bake for 15-18 minutes. 6: Serve with peanut butter chipotle sauce, chopped onion, cilantro, roasted peanuts and enjoy!
