A Mexican-inspired treat that's low in sugar and high in protein, perfect for holiday baking. This recipe combines almond milk, gelatin, monk fruit, and chocolate whey protein for delicious gummies topped with sugar-free chocolate and strawberries.

1: Let the beef gelatin soak in the water for 5-8 minutes. 2: In the meantime, mix the rest of the ingredients. 3: Microwave the combined ingredients for 1:30 minutes. 4: Dissolve the beef gelatin in the heated milk mixture and pour into silicone molds. 5: Let it sit for a couple of minutes at room temperature before transferring to the refrigerator. 6: Unmold and slice into 4-6 pieces. 7: Melt the chocolate chips with coconut oil and stir well. 8: Place some of the strawberries on top of the sliced gummies and cover them with melted chocolate. 9: Refrigerate for a few minutes and enjoy!
