Easy, low sugar and high-protein mandarin floats or possets perfect for summer. These delightful treats combine orange jel dessert, Greek yogurt, almond milk, and mandarins for a refreshing dessert. Topped with a monk fruit glaze, these floats are both delicious and visually appealing.

1: Slice the mandarins in half and carefully remove the flesh, set these aside. 2: In a large bowl add the greek yogurt, unsweetened almond milk and squeeze one half of the mandarins. 3: Beat all the ingredients for the pudding for 3-5 minutes. 4: Stuff the mandarin shells with the mix and refrigerate for at least 40 minutes. 5: Mix the ingredients for glaze and top the mandarins with it along toppings. 6: Enjoy!
