This is my iconic easy Caramel Macchiato Ice Cream Blondies recipe, simple and epic combo that you need to make during no matter the season... this is not your regular blondie recipe.. this is healthy, lower in sugar and super easy to make!

Preheat the oven at 325F. Mix the ingredients for the blondies. Add the wet ingredients and incorporate well. Transfer the batter into a 8x8 baking dish. Bake for 20 minutes. Let it cool down completely. Top with ice cream and with cookies. Freeze for 2 hours. Slice into 9 pieces and enjoy!
