Delicious gluten-free truffles made with cornmeal, honey, and freeze-dried strawberries, coated with white chocolate and topped with sea salt flakes.

1. In a large bowl mix all dry ingredients for the truffles except for the freeze dried strawberries. 2. Add in wet ingredients and incorporate well, mix in the strawberries. 3. Create 10 golf ball size truffles and refrigerate for a few minutes. 4. Melt the white chocolate with the coconut oil using the Bain Mary method in the microwave. 5. Dip each truffle in the melted chocolate and top with sea salt flakes, honey & crushed strawberries. 6. Refrigerate for a few minutes and enjoy!
