This is my iconic Salted Caramel Date Vegan Cheesecake, this are just a simple and epic combo that you need to make to satisfy that sweet tooth, in a delicious and healthy way... this is not your regular cheesecake...

Soak the dates in boiling water for 10 minutes. Drain the dates and reserve the water for the base. Crush the rice cakes in a bowl, add the water from the dates and vanilla extract, microwave for 2:00 minutes. Let it soak until the rice cakes have soaked the water. Blend all the ingredients for the cheesecake. Decorate two jars with the caramel sauce, add the rice cake base into each jar and top with cheesecake filling, add your toppings and enjoy!
